Carrying out a project such as ours, The Belgian Owl, Belgian Single Malt Whisky distilled from barley grown in Belgium, is the result of the synergy between the creators of the project and the enthusiasts of the product.
It is an adventure on a human scale, that has become much more enjoyable as it is based on wonderful friendship and is expressed with great passion. We want to share this passion with you all, who encourage us to go forwards by tasting and appreciating our ‘The Belgian Owl'. We would like to thank you for giving us encouragement up to now, and promise to take you even further in our extraordinary adventure!
There are three of us at ‘The Owl Distillery’: Etienne Bouillon, the whisky maker, Christian Polis, the financier, and Pierre Roberti, the farmer.
The first person on the list, passionate about distillation, is the creator of ‘The Belgian Owl’ project. A distiller since 1993, Etienne Bouillon has successfully brought together the know-how of four generations in the magical world of alcoholic drinks. His knowledge of traditional fermentation techniques and natural bouquets, along with his mastery of the distillation process, have provided and steered a know-how that is comparable with the great distillery houses of Europe and throughout the world for the distillation of an excellent malt whisky.
As a pupil of Jim McEwan of the Bruichladdich Distillery, Etienne Bouillon is an ambassador for the ‘Bruichladdich Academy’ and has been able to combine his passion for his work by making an extraordinary dream come true, a dream that he wants to share with everyone. Meeting Christian and Pierre helped him to transform this dream into a fantastic reality.
The second person, a company investments advisor, provided his management knowledge needed for this entrepreneurial project. Even though he was already friends with Etienne and Pierre, Christian Polis immediately fell in love with this project. His financial skills and his commitment have provided the financial structure required for the inherent development of the project. Christian Polis covered the risk that was not covered by the traditional financial network which is somewhat cautious given the time needed between providing the finance and marketing a malt whisky.
Pierre Roberti, from the world of agriculture, hardened to the very high production techniques relating to soil, as well as having a knowledge of phytogenetics, is an expert in growing barley. He is from seven generations of farmers at his Goreux farm in Hesbaye, putting his know-how, and that of his family into the creation of ‘The Belgian Owl'. The Owl Distillery therefore provides a prestige diversification for our agricultural industry, and it is Pierre Roberti who sets the purchase price for the barley…on the road to fair trade!
